Knowing some basics of human hearing, an obvious approach to recording stereo would be to put some mics on a head sized sphere.  This is in fact a perfectly valid approach and works pretty well for Realistic stereo when listening on headphones.  It is called Binaural Stereo.

 

It does not work nearly as well on speakers because speakers have Crosstalk.

 

Now you may have noticed that your body is different than the bodies of other people.  Of particular relevance for this conversation, the size and shape of your head, plus the details of your outer ear (called the Pinna) don’t match other people exactly.  So when companies make head sized spheres and even attach structures that look/sound like an outer ear, what exact size and shape should be used?  Most companies use averages to determine the size and shape of so called “Dummy Heads”.  If your hearing anatomy is significantly different than average, Binaural Stereo will not be as convincing for you as someone who is closer to the average.

Certainly Binaural Recording offers possibilities for Realistic stereo because it attempts to most closely match the way our hearing works.  But limitations have prevented it from becoming as common as we might expect.
